This stew definitely delivers a powerful punch of beef and meaty flavors thanks to the Gop Chang, which is beef tripe in Korean. Gop Chang not only carries a strong taste and aroma, its texture is fatty and chewy, which perfectly compliments the other ingredients in the dish, such as onions, scallops, and fresh sesame leaf.
