Our story of Gam Ja Tang

Gam Ja Tang is a hearty pork bones stew with vegetables and potatoes. Gam Ja Tang in Korean literally means potato stew, so people often mistake the dish to have potatoes for its main ingredient but the truth is that pork really takes the center stage in this dish. The mushy texture and light taste of potatoes in the stew beautifully compliment the pork, but the star ingredient is truly the pork. Both the meat and bones are boiled for hours with seasoning until the meat simply falls of the bone and melts in your mouth. This process also produces an amazing pork bones broth that is rich and creamy. In addition to the meat and potatoes, this soup also has a wide variety of vegetables that give extra nutrition, texture, and taste. Vegetables like cabbage, bean sprouts, chives, onions, scallions, and perilla leaves add a nice crunch to each mouthful of the soup. For seasoning, a mixture of fish sauce, minced garlic, ginger, gochujang, black pepper, red chili peppers, and doenjang makes all the ingredients come together to a spicy, nutty, and savory goodness. Gam Ja Tang is popular in Korea as a hangover dish or for dinner thanks to its nutritious and flavorful pork bones stock. Slurping can be irresistible for this perfect one pot meal. Either put a spoonful of the soup over rice and mix well to enjoy or dunk the entire bowl of rice into the soup.
