There are many ways to enjoy Galbi. One way is, of course, to grill them and simply enjoy it by itself. You can also have it as a ssam, which is a lettuce wrap, with other condiments and banchans. Another way is over rice in a dish called Galbi Dupbap. This style of putting marinated prime short ribs and lettuce over rice is popular in Korean home cooking, especially after the holidays when there is leftover Galbi. In trying to figure out how to make a proper meal out of what is left over was born this easy meal that is also very satisfying and filling. Saltiness from the soy sauce and savory taste of vegetables with galbi’s meatiness and fattiness create a dish that goes excellently well other banchans.
